Most people, like yourselves, dont want to be injured. They train at a very respectful pace and are there to improve their skill, not to hurt their training partners. There might be someone at the gym that goes to hard, simply avoid them.
With Boxing you risk damaging your wrists while punching. This is GREATLY reduced (almost to no chance) if you buy hand wraps and properly wrap your hands before sparring. Most reputable gyms will require this before they let you punch. The only other time you can get damaged in Boxing is during sparring. Again this is different for all gyms; Most times you wear protective headgear and fight at 50-70%. Long sparring may result in a sore nose or a headache for the rest of the day. Minor stuff for all the confidence and skill you are learning.
Judo can get a little riskier. In Judo you normally start in a standing position and you throw your partner to the ground, or you get thrown. Again, no one is trying to hurt anyone, but a bad throw might result in you landing improperly and hurting your shoulder/back/legs/arms. Most Judo instructors will teach you the proper way to fall so your chances of injury are lowered. This is a fun art if you want to have the knowledge that you can flip anyone on their ass in a moments notice.
Ju Jitsu is another art that can be risky depending on your training partner. In all my classes i have never been hurt, but i have seen people injured for a few days/weeks due to a mistake by themselves or their partner. I see pride getting in the way of this sport, and many people take the pain instead of tapping out of a submission. As long as you quit when you should, then injury should avoid you. Heel hooks can be VERY damaging to your feet and are banned from most gyms (until you reach a higher belt level). Most other injuries in this sport would be in the elbow area, neck/shoulder area, and knee area (all the submission points)
I cant say much about Karate.... I just keep picturing 5 year old kids in a stance, practicing defense moves in front of a mirror that will never work in real life.
