Why does the top layer of freshly made guacamole turn black so quickly?
How can this be avoided? And is this top black layer safe to eat? I hate the idea of wasting guacamole.
Answer:
It turns black from oxidation, the same way an apple turns brown. It won't hurt you to eat it, but it doesn't look good. The best way I know to hold off the process is to squeeze a bit of lemon juice in the guacamole and mix in well, then squeeze a little extra on top. Cover with plastic wrap.
